Out on the Water

Guests often pass along lovely ideas, and one of the best was to bring an inflatable canoe to the house. Once summer crowds fill the beaches, we head out in PS Paloma — short for paddle ship — in search of calmer water. A few details still need refining, but the idea has already shown its value.

Chocolate Mousse Pie

A gluten-free pie that calls for no butter and no baking. The base is pressed into a 28 cm mould lined with plastic film to keep the mixture from sticking, and is made from 165 g almond powder, 100 g dark chocolate (70%), three tablespoons of water and five tablespoons of sugar, with the chocolate melted gently.
